Chenna Payas

Ingredients:
For Chenna/Cheese:
- Millk - 1/2 lit
- Lemon Juice - 2tbsp
- Milk - 1 lit
- Sugar - 1/2 Cup (or according to your taste)
- Corn starch - 2 tbsp
- Milk made/Condensed milk - 1/2 Cup
- Green Cardamom Powder - 1/2 tsp
- Cashew nut - 7 to 8 (Fried till golden)
Step 1: Boil the 1/2 lit milk in a pan.Add lemon Juice to milk when it comes to boil .Wait till all the milk curdles. Now Drain the whey and sqize till all the liquids come out. Now chenna is ready. keep it aside.
Step 2: Boil 1 lit milk in another pan. Simmer it till it reduced to half of the actual quantitty. Stire it continuously and take care not to stick to the bottom of the pan.
Step 3: Now milk will be bit thicken. To thicken it more add condensed milk to it and mix.
Step 4: Add Water to corn starch and make a smooth thin paste. Add this paste to the milk. Now the milk will have a greate density.
Step 5: Add Sugar and mix till it resolve.
Step 6: Mash the Chenna and add it to thickened milk. Just mix it for another 2 min.
Step 7: Add the Cashew nuts and take off the heat.
Now your Chenna payas is ready. Cool it and serve.
Tips: Add Sugar first then Chenna in the milk otherwise there is a chance that whole milk will start curdling.
